Meet our newest experiment: Galax!
Named for the milky-white flowers of the native Galax evergreen, Galax is a washed-curd, natural rind cheese similar to Gouda. We've been wanting to experiment with this style for some time, and this spring we finally got our chance.The results? A mildly flavored cheese whose smooth, buttery texture brings out the natural sweetness of the milk, with hints of walnut on the finish. While we expect the flavor, size, and shape to change a great deal as we revise the recipe, we are very pleased with this beginning!
