Until now, we've been making our experimental batches of our new washed-curd cheese Galax in Appalachian hoops. But with the first batches showing so much promise, we decided it was time for a hoop of their own! The Galax hoops are square like the Appalachian, but both smaller and taller for a cute cube of a cheese -- we estimate they'll be four to six pounds at finished weight.
We made our first batch of cheese in the new hoops last week, and while it was an exciting make (you can never plan for everything!) we're very pleased with how this inaugural batch turned out. Now to see how they age in the cellars!
