As our newest cheese, Galax continues to surprise us. We've been experimenting with aging this year, and the 2025 Galax batches we've held back have done marvelously: a rich, brothy paste, the sweetness of the younger cheeses turned into a hint of caramel while the sharpness is mellowed by satisfying umami. The cheese is less springy than its younger counterpart, but it melts in the mouth (and on the raclette maker) even better.
