The silver lining of only making cheese every other day: more time to experiment! On Wednesday, the cheesemakers saved back some curd from the Grayson for a try at some itty-bitty Mini Blues. We've tried many times over the years to find a recipe for blue cheese that worked for us... fourth or fifth try is the charm? We'll know in two months!
